    The traditional Basque gastronomy, apart from being various, is recognized worldwide thanks to the local chefs. The recent creation of the Basque Culinary Centre has increased the popularity of the Basque cuisine among the world. In this page, you will find some of the most popular dishes, the ones you have to taste during your Erasmus in San Sebastian.

 

1- Pintxos

 

    One of the foodie treasures of the gastronomy in San Sebastián is its famous pintxos - culinary bites ranging from the original slice of bread piled with food, to tiny miniature haute cuisine creations.
 

 

2- Marmitako

 

    The Word Marmitako is thought to be originary from the instrument used by Basque sailor to cook tuna during their long sailings: marmita (a kind of pot). The main ingredient of Marmitako is tuna, usually accompanied by red peppers and potatoes.
 

 

 

3- Porrusalda

 

Porrusalda is also one of the best-known dishes of our gastronomy and it is very typical during the winter. The dish is basically a soup of leek accompanied by carrot, potatoes and cod.
 

 
 


4- Chipirones en su tinta

 

    Txipirones en su tinta is also another famous dish and well-known in the whole country. The main ingredient is the txipiron or squid and it is cooked with its own ink. You can also cook it with onion and pepper to improbve the taste of the dish.
 

 

5-Sukalki

 

    Sulalki is a stew cooked with meat, potatoes, onion, pepper, garlic and green peas. During some local parties, it is typical to celebrate Sukalki Contests, competitions between friend groups competing in cooking the best Sukalki.
 
 

 
6-Txakoli
 
The txakoli is made in the coastal towns of Getaria and Zarautz, both belonging to the appellation of origin Getariako Txakolina. It is a white wine, young and fruity, of moderate graduation (between 9.5º and 11.5º). The txakoli has intense aromas of citrus, herbs and flowers.   It is recommended to drink fresh and always breaking it in the glass to serve to give off its full range of aromas. 
 

7- TORTILLA DE BACALAO

A delight of the Basque cuisine that could not miss among the typical dishes of San Sebastián. The cod omelette is exquisite and consists of desalted codfish, which is prepared with egg, onion, green peppers, garlic and extra virgin olive oil.

It is usually served as starters in the Basque sidrerías.

 

 
8- BACALAO AL PIL PIL

A delicious dish typical of Basque gastronomy, which consists of cod made from olive oil, garlic and chilli. The key to this dish is the sauce.
